Borage, Mint, and Lemon Balm Sorbet

Bring sugar, water, and herbs to a boil.  Remove from heat and add wine.  Cover and cool for several hours, then add lemon juice.  Put in freezer.  As soon as mix begins to freeze, stir briskly and put back in freezer.  Repeat every 15 minutes for 3 hours.  Scoop into bowls, and garnish with borage and mint sprigs.


  • 2 1/8 cup sugar
  • 2 1/8 cup water
  • 6 sprigs mint, plus some to decorate
  • Borage sprigs to decorate
  • 6 lemon balm leaves
  • 1 cup white wine
  • 2 TBS lemon juice
