3 TBS grated Parmesan cheese
½ cup light cream

For the crêpes, melt a little butter in a small fry pan.  Add about 2 TBS batter and swirl round the pan.  Cook until golden, turn, and cook the other side too until golden.  Put crêpe on a paper towel.  Fill the crêpes with the mix, roll up and place in an ovenproof dish.  Sprinkle with Parmesan cheese and pour the cream over the top.  Bake for 20 minutes. Yummy!

Crêpes with Basil Stuffing (for a gourmet lunch treat)

Put all batter ingredients in a blender, and blend for about a minute.  Let stand at least an hour. 

Melt the butter and sauté the onion and garlic slowly for about 5 minutes.  Add the mushrooms and sauté 1 minute more.  Leave to cool.  Mix with the rest of the filling ingredients and chill.

Preheat oven to 350 degrees.
