Fagioli all 'Uccelletto Beans

Soak a pound of white beans overnight. The next day, rinse the beans, put in a large pot, and cover with water. Simmer for 2 hours or until tender (or, you can cook these in a pressure cooker).

Heat 3 TBS olive oil. Add: 2 cloves minced garlic, five fresh chopped sage leaves, and fresh ground pepper. Saute until garlic begins to change color. Drain beans and add to the skillet. Stir in 4 peeled, chopped tomatoes and simmer for 20 minutes. Taste and add salt, if needed. Serve at room temperature.
