Lemon Grass Chicken Curry

Place chicken in a bowl.  Add curry paste and stir to coat chicken.  Set aside for ½ hour.

In a wok, heat oil, add garlic, and fry until golden.  Stir in chicken , fish sauce, lemon grass, lime leaves, sugar, and water.  Simmer 15 to 20 minutes until chicken is cooked through.  If chicken becomes too dry, add a little more water, but the final dish will be on the dry side. Serve with rice.


  • 12 oz boneless chicken chopped into small pieces
  • 1 TBS Red curry paste
  • 3 TBS vegetable oil
  • 2 cloves garlic, chopped
  • 1 TBS fish sauce
  • 2 stalks lemon grass, chopped
  • 5 Kaffir lime leaves, shredded
  • ½ tsp crushed palm sugar
  • ½ cup water
