Sara's Savory Stuffing
Toast the wheat bread, and butter on one side and cut into ½ " cubes. Sprinkle generously with salt and ground pepper, dried thyme, dried sage, and rosemary. Heat 8 TBS butter in a large pan until foam subsides. Add and cook, stirring until tender for about 7 minutes: 2 cups sliced onions and 2 cups chopped celery. Stir into bread cubes and toss until well combined.
Melt 2 more TBS butter until foam subsides. Add and cook until brown about 5 minutes: turkey heart, gizzard and salt and pepper. Chop them and add to the bread cubes. Cook 1 lb. breakfast sausage and crumble. Add to bread cubes along with mozzarella cheese and pepperoni, cut into ¼ " cubes. Toss to combine. Generously moisten with 2/3 to 1 cup chicken broth. (Sausage, mozzarella, and pepperoni are optional).
